When it comes to back to school, providing healthy snacks for my boys is something that is important to me. Sure, I could go and pick up a box of cookies, some rice cakes, and of course we always enjoy carrots and dip. Living with a cookie monster though, it’s way easier I find to make healthy, nutritious cookies with a little twist using .
What is Kefir?
Lifeway Kefir is a cultured probiotic beverage that is a tasty cousin to yogurt, similar to those drinkable yogurts the kids love, except Lifeway Kefir is more alive and active in cultures, up to 14 to 16 hours. What I love the most is the amazing flavor and taste and healthy choice being it’s a high probiotic count. Each cup of Lifeway Kefir contains 12 different probiotics, allowing for a more nutritious snack no matter how you use it.
I pick up Lifeway products at my local Safeway. They are found in the dairy section where the milk is located. I found mine easy and for this shopping trip, I needed some Strawberry Kefir to use for my recipe.
Many people simply drink Lifeway Kefir as it comes in a variety of different flavors, from plain, strawberry, blueberry and peach and many more. You can make smoothies, desserts, snacks and treats with this great tasting product. And who would think you could bake cookies with it! Lifeway Peanut Butter Chocolate Chip Strawberry Kefir Cookies
Ingredients You Will Need:
1 cup butter or margarine
3 cups flour
1 cup brown sugar
2 cups sugar
tsp baking powder
tsp baking soda
1/2 tsp salt
1 1/2 cups peanut butter
1/2 cup Lifeway Kefir Strawberry Smoothie
Mix together the peanut butter, sugar, butter using a beater, then add in the remainder of the ingredient starting with the eggs, then flour, brown sugar, baking powder and baking soda until you get a moist cookie dough. Fold in the chocolate chips (semi-sweet) last.
Spoon the dough onto your baking sheet. Make sure you use parchment paper to avoid crisping or burning the bottom of the cookies. Bake in the over for 10 minutes at 325 degrees. (Remember that oven times vary) so adjust your temperature according to your own oven’s heating ability.
The recipe usually calls for 1 tbsp of vanilla. I use Lifeway Strawberry Kefir 1/2 cup instead to add a hint of strawberry to the cookies mixed with chocolate and peanut butter. This turns them into dessert cookies that are rich, healthy and yummy!
Lifeway Kefir is great for baking. Next we are going to try using the Kefir Strawberry since I bought 3 of them to make some muffins and breakfast smoothies. I plan on freezing the muffins so the boys can grab them for snacks. 🙂
