You know one of the best things about the holidays is the smell of my mother’s baking. Each and every year, I sit like a kid in a candy shop as I watch her roll out the dough for the short bread cookies, and mix the chocolate for the recipe I’m about to share with you that is to die for.
They have many names. Some call them chocolate coconut macaroons. Some call them just coconut chocolate balls.
My nana use to call them “Hot Rods” as did my mother, and they were one of the best treats I ever had growing up during Christmas time.
The best part of making these delicious-and-oh-so-scrumptious (no bake) treats is just that. You don’t have to bake them. Even the kids can help make them because these hot rods treats are that easy.
- 6 ounces (120 grams) semi sweet chocolate, chopped
- 3 large egg whites
- 1/4 cup unsweetened cocoa powder
- 3/4 cup white sugar
- 1.5 teaspoon pure vanilla extract
- 3 cups dried coconut
Melt chocolate slowly over low heat, whisk eggs and add ingredients together until blended. Mix in the chocolate and make sure all the coconut is covered. Place spoonful amounts on parchment paper and let cool at room temperature. (Do not freeze) Then serve when cool. Makes 30 macaroons.
